This 2016 Pinot Noir is a collaboration between Michael Dhillon at Bindi and the sommeliers of Vue de monde. An early spring prevailed a slightly earlier harvest, where normal to warmer weather and a dry growing season has given this wine power and concentration.
Black cherry and raspberry fruits are prevalent on the nose and this wine tastes ripe and juicy with a lovely richness and concentration - think savoury spices and supple tannins.
The fruit, from Bindi's Macedon vineyard, underwent natural fermentation and long lees aging in French barrels to develop complexity while preserving perfume and purity.
