A Champagne that is the absolutely perfect Aperitif.  The NV Diebolt-Vallois Blanc de Blancs is succulent in flavour and bright in acidiy (think apple and citrus skin), with fresh floral scents and a decent amount of bubble.

Inoffensive to the sceptics, delightful to the devotees.
